Authentic Birria Tacos Recipe (Slow Cooked & Juicy)

Authentic Birria Tacos are a Mexican delight featuring tender, slow-cooked beef infused with smoky chilies and aromatic spices. The meat is shredded, crisped in a pan, and served in warm tortillas with a side of rich, savory consomé for dipping. This recipe delivers the ultimate juicy, flavorful taco experience.

Ingredients
  

  • 3 lbs beef chuck roast cut into large chunks
  • 4 dried guajillo chilies stems and seeds removed
  • 2 dried ancho chilies stems and seeds removed
  • 4 cloves garlic peeled
  • 1 white onion quartered
  • 2 tomatoes roasted or boiled
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground cloves
  • 4 cups beef broth
  • Salt and black pepper to taste
  • 16 small corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 1 cup chopped fresh cilantro
  • 1 cup diced white onion for topping
  • Lime wedges for serving

Method
 

  1. Toast the dried chilies in a dry skillet over medium heat for 1–2 minutes until fragrant, then soak in hot water for 15 minutes until soft.
  2. In a blender, combine soaked chilies, garlic, onion, tomatoes, vinegar, cumin, oregano, cloves, and 1 cup beef broth; blend until smooth.
  3. Strain the sauce into a large Dutch oven or slow cooker, discarding solids.
  4. Season beef chunks generously with salt and pepper, then add them to the pot with the sauce and remaining beef broth.
  5. Cover and cook on low heat for 3 hours on stovetop or 8 hours in a slow cooker until beef is fork-tender and shreds easily.
  6. Remove beef, shred it with two forks, and return it to the sauce to keep moist.
  7. Dip each corn tortilla into the top layer of the consomé (broth) and place on a hot skillet or griddle.
  8. Sprinkle shredded cheese on one half of each tortilla, add a portion of shredded beef, fold over, and cook until golden and crispy on both sides.
  9. Serve tacos with chopped onion, cilantro, and a side of the remaining consomé for dipping.

Notes

  • For extra depth, add 2 bay leaves and a cinnamon stick to the cooking liquid.
  • The consomé doubles as a dipping sauce—strain it well before serving for a clear broth.
  • Use corn tortillas for authenticity; warm them before dipping to prevent breaking.
  • Leftover birria can be refrigerated for up to 4 days and tastes even better the next day.
