Copycat Lee’s Famous Chicken Recipe (Crispy & Juicy)

This recipe replicates the iconic, ultra-crispy, and juicy fried chicken from Lee’s Famous Recipe. The secret lies in a double-dredge technique and a splash of pickle juice for tenderness, creating that signature golden crust with a tender, flavorful interior.

Ingredients
  

  • 1 whole chicken cut into 8-10 pieces or 3 lbs chicken thighs/drumsticks
  • 2 cups buttermilk
  • 1/4 cup dill pickle juice crucial for flavor
  • 1 tablespoon hot sauce optional, for heat
  • For the Dry Coating:
  • 2 cups all-purpose flour
  • 1 cup cornstarch makes it extra crispy
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons poultry seasoning
  • 1 teaspoon cayenne pepper adjust to taste
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • For Frying:
  • 4 cups vegetable oil or peanut oil for deep frying

Method
 

  1. In a large bowl, whisk together buttermilk, pickle juice, and hot sauce; submerge chicken pieces, cover, and refrigerate for at least 1 hour (or up to 4 hours for best results).
  2. In a separate large bowl or shallow dish, combine the flour, cornstarch, garlic powder, onion powder, paprika, poultry seasoning, cayenne, salt, and pepper; mix well.
  3. Remove a chicken piece from the brine, allowing excess liquid to drip off, and dredge it thoroughly in the flour mixture, pressing firmly to adhere.
  4. Dip the floured piece back into the buttermilk brine for a second coat, then dredge again in the flour mixture; this double-dredge creates the signature craggy crust.
  5. Place the breaded chicken on a wire rack and let it rest for 10-15 minutes (this helps the coating stick during frying).
  6. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C); carefully place chicken pieces in the hot oil, skin-side down, without overcrowding.
  7. Fry dark meat for 14-16 minutes and white meat for 12-14 minutes, turning occasionally, until golden brown and internal temperature reaches 165°F (74°C).
  8. Remove chicken to a clean wire rack over a baking sheet to drain excess oil and keep the crust crispy (do not place on paper towels, which trap steam).

Notes

  • For the ultimate crunch, add 1/4 cup of the buttermilk brine to the flour mixture and rub it in with your fingers to create small "crumbles" before dredging.
  • Ensure your oil temperature stays consistent; if it drops below 325°F, the chicken will absorb too much oil and become greasy.
  • Resting the breaded chicken on a wire rack before frying ensures the crust sets and won't fall off in the fryer.
