Easy 2 Banana Bread Recipe (Moist & Quick Bake)

This incredibly moist banana bread uses just two ripe bananas for the perfect classic flavor. It comes together in one bowl and bakes in under an hour. Ideal for using up those spotty bananas sitting on your counter.

Ingredients
  

  • 2 large ripe bananas mashed
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs room temperature
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ½ cup sour cream or plain yogurt optional for extra moisture

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter and sugar to the bananas and whisk until combined.
  4. Beat in the eggs and vanilla extract until the mixture is smooth.
  5. Sprinkle the baking soda and salt over the mixture and stir to incorporate.
  6. Gently fold in the flour using a spatula; do not overmix (batter will be thick).
  7. (Optional) Fold in the sour cream/yogurt for extra moisture.
  8. Pour the batter evenly into the prepared loaf pan.
  9. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas with brown spots for the best sweetness and flavor.
  • If you don't have sour cream, substitute with milk or extra mashed banana.
  • For extra texture, fold in ½ cup of walnuts or chocolate chips.
  • Store in an airtight container at room temperature for up to 3 days.
